What is EMDR?
Our office has counselors certified in EMDR (Eye Movement Desensitization and Reprocessing) therapy. This is a powerful and preferred therapy when working with people who have experienced trauma. Trauma can come from a one-time significant negative experience and can also come from less-intense negative experiences which are repeated over time and leave significant damage (i.e., childhood neglect or mistreatment). Traumas can get locked into our nervous system and cause ongoing difficulties long after the event(s) that caused them have passed. In many situations, no amount of talk therapy will resolve the issue but EMDR treatment is able to resolve it within a few sessions. Schedule an EMDR session (CTA)
WHAT CAN I EXPECT DURING MY PRE-OP EVALUATION?

The format for these evaluations are kept fairly standard by insurance companies. We’ll talk about your weight journey in a non-judgmental environment and begin to explore how emotions and experiences influenced weight gain and loss. We’ll evaluate any interplay between weight and other mental health issues and examine how they affect your candidacy for bariatric surgery.

Keto Brownie Cheesecake
Ingredients:
Brownie Base
1/2 cup butter
2 oz unsweetened chocolate chopped
1/2 cup almond flour
1/4 cup cocoa powder
pinch salt
2 large eggs
3/4 cup Swerve Sweetener
1/4 tsp vanilla extract
1/4 cup walnuts or pecans chopped
Cheesecake Filling
1 lb cream cheese softened
2 large eggs
1/2 cup Swerve Sweetener
1/4 cup heavy cream
1/2 tsp vanilla extract
Instructions:
For the brownie base:
Preheat oven to 325F and butter a 9-inch springform pan. (if your springform pan is prone to leaking oil, place it on a cookie sheet)
In a microwave safe bowl or glass measuring cup, melt butter and chocolate together in the microwave in 30 second increments. Whisk until smooth. Alternatively, you can melt them together over low heat in a small saucepan.
In a small bowl, whisk together almond flour, cocoa powder and salt.
In a large bowl, beat eggs, Swerve and vanilla until smooth. Beat in almond flour mixture, then butter/chocolate mixture until smooth. Stir in nuts.
Spread evenly over bottom of prepared pan. Bake 12 to 18 minutes until set around edges but still soft in the center. Let cool 15 to 20 minutes.
For the filling:
Reduce oven temperature to 300F.
In a large bowl, beat cream cheese until smooth. Beat in eggs, Swerve, cream and vanilla until well combined.
Pour filling over crust and place cheesecake on a large cookie sheet. Bake until edges are set and center just barely jiggles, 35 to 45 minutes. Remove from oven and let cool.
Run a knife around edges to loosen and then remove sides of pan. Cover with plastic wrap and refrigerate at least 3 hours.
Serve with sugar-free chocolate sauce, if desired.
1-3 bags of Miracle Noodle Pasta (select your favorite noodle shape)
3 Tablespoons of Fish Sauce
1/4 Cup of Fresh Squeezed Lime Juice
1/2 Teaspoon of Stevia
1 1/2 Tablespoons of Asian Chile Pepper Sauce
1/4 cup of Chicken Stock
1/4 cup of Coconut Oil
1 tablespoon of chopped garlic (Minced)
8 Ounces Skinless, Boneless Chicken Breast
2 Eggs
5 Cups of Bean Sprouts
6 Green Onions, Chopped into 1 Inch Pieces
2 Tablespoons of Chopped Unsalted Peanuts
1/4 Cup of Chopped Fresh Cilantro
1 lime, Cut into 8 Wedges
Directions:
n a small bowl, stir together the fish sauce, lime juice, stevia, Asian Chile pepper sauce and chicken stock. Set aside.
Heat a wok or large skillet over high heat and add coconut oil. When the oil is hot, stir in garlic and cook for about 10 seconds. Add the chicken; cook, stirring constantly until chicken is cooked through, 5 to 7 minutes.
Move the chicken to the side of the wok and pour the eggs in the center of the wok.
Cook and stir the eggs until firm.
Add the Miracle Noodles to the wok and pour in the sauce.Cook, stirring constantly, everything is well blended.
Stir in 3 cups of bean sprouts and green onions.
Remove from the heat and garnish with chopped peanuts, fresh cilantro and the remaining bean sprouts and lime wedges on the side.
...those little treats we make ourselves for when we need a little extra fat.
Ingredients:
3/4 cup melted coconut oil
9.5 Tbsp (150g) almond butter
60 drops (about 3/8 tsp.) liquid Stevia
3 Tbsp cocoa
9 Tbsp melted salted butter
Directions
Pour a scant 2 Tbs. into each of 24 candy or mini muffin molds. I use a silicone candy mold that I bought at Michael's Crafts. If you prefer, you can use those little paper mini muffin cups, lined up on a cookie sheet.
I place my candy mold on a small cookie sheet first, and then fill it, then put it in the freezer. If you try to put it in the freezer without first putting it on a cookie sheet, you'll be sorry.
Freeze for at least 30 minutes, then pop out the Fat Bombs and store them in a bag or other container in the freezer. You can keep them in the fridge, but as soon as you hold one with your hot little fingers, it will melt really fast. Frozen, it melts slower.
